These easy coconut macaroons are made with desiccated coconut using a simple recipe! Chewy on the inside and perfectly toasted on the outside, these small wonders of joy are a mandate for any Christmas celebration!
In a beater, take ½ cup of brown sugar and ¼ cup of melted butter and whisk properly. After few minutes of whisking, add an egg yolk and mix properly. Gradually, add ½ cup desiccated coconut, ½ cup Maida (All-purpose flour), 1 tbsp baking powder and 1 tsp vanilla extract and whip properly until the mixture becomes smooth. Take a greased baking tray and divide the mixture into equal small round portions. Flatten the mixture (like a cookie) and place glazed cherries on the top. Let it bake for 10 mins at 175 degree Celsius. Let the macaroons cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely. Enjoy!
