“A nation’s culture resides in the hearts and in the soul of its people” – Mahatma Gandhi.

Come January 26, the air will be filled with patriotism. As it is commemorated as a National Holiday, it makes for a good family sit-down meal with scrumptious desserts and food.

This year, why not celebrate Republic Day with a fun and healthy dessert that is naturally tri-coloured? That's right, not a single drop of food colouring and every ingredient has its own health benefits.

Spinach is an excellent source of vitamin K, vitamin A, vitamin C and folate as well as being a good source of manganese, magnesium, iron and vitamin B2. Cucumber helps in keeping the body hydrated and regulating body temperature, whereas, Carrots are a good source of beta carotene, fiber, vitamin K1, potassium, and antioxidants.

Green Layer (Palak Halwa):

Step 1: Blanch and wash the Palak under running water for a minute. Put the Palak in a Mixer Grinder and make a smooth puree.

Step 2: Heat ghee in a Kadhai and add the Palak puree. Sauté for 7-8 mins and add sugar, khoya and milk. You can use Nirlep Selec+ 3 Ltr Non-Stick Induction Deep Kadhai with Lid or visit shop.bajajelectricals.com/home/Nirlep for more options.

Step 3: Keep on stirring until it starts leaving the sides of the Kadhai. Add cardamom powder and sauté for a minute. Garnish it with dry fruits and keep it aside.

White Layer (Cucumber Halwa):

Step 1: Wash and peel one cucumber, grate it and squeeze out the water.

Step 2: Heat ghee in a Kadhai and add the grated cucumber. Sauté for 5-6 mins.

Step 3: Add milk and sugar to the mixture and keep on stirring.

Step 4: Once the milk dries up completely, add khoya and stir continuously. Once ghee starts floating on top, switch off the gas.

Step 5: Add cardamom powder and sauté for a minute. Garnish it with dry fruits and keep it aside.

Saffron Layer (Gajar Ka Halwa):

Step 1: Peel and grate the carrots with a hand grater or a food processor.

Step 2: Take a heavy-bottomed pan and bring the milk to a boil on a low flame. Use an iron Kadhai or a non-stick Kadhai to make the halwa. Nirlep offers an array of long-lasting kitchen companions that will prove to be an asset to your galley.

Step 3: Add the grated carrots and start stirring continuously. Keep cooking until the milk completely reduces and evaporates. Make sure it doesn’t get burnt in the process by continuously stirring.

Step 4: When the milk reduces to almost 75 percent, add ghee, sugar and powdered cardamom. Keep stirring until the milk evaporates and the halwa thickens. Garnish it with dry fruits.

Now, arrange all the three halwas as per the tricolour on a plate. The Palak Halwa must be placed at the bottom of the plate, followed by the Cucumber Halwa and Gajar Ka Halwa at the top.

With this recipe, you can definitely impress your family and friends with your culinary skills as well as win brownie points for the tricolour theme.

Happy Republic Day!
