Tricolour Recipes to Celebrate Our Republic Day!

Our Republic day means a lot to us. We celebrate it with friends and family by hosting our flag in the morning and then participating in musical or sports programs. Republic day, in the modern context, also means a day of relaxing at home, probably having a late lunch and then a lengthy afternoon siesta.

This year, why not take the celebrations a step further and make scrumptious dishes that follow the colours of our Indian flag. Read on for a couple of super easy tricolor recipes that set the perfect mood for your celebrations.

The Tricolour Rice:

Rice is a staple food for almost the entire nation. And, just by quirking it up a bit, you can make it look - oh so delectable!

Orange Rice Ingredients:

1 Cup Basmati rice
3 Carrots (steam cooked)
2 Tomatoes (chopped)
¼ Tsp Turmeric powder
2 Tsp Sambhar powder
2 Tsp Oil
As per taste Salt


White Rice Ingredients:

1 Cup Makhana or Lotus Seeds
1 Cup Coconut milk
1 ½ Tsp Cumin seeds
1 Tsp . Oil
As per taste Salt 


Green Rice Ingredients:

1 Cup Basmati rice
½ Cup Coriander leaves (chopped)
1-2 Green chillies
2 Tbsp. Cashew nuts / Scrapped coconut
1/2-1 Tsp Mustard seeds
1 Tbsp. Split black lentils
2 Tsp Oil
As per taste Salt


Cook 2 cups of rice first, then set it on a plate to cool. You need to cook it in a way that each grain is separate. Once the rice cools down a bit, separate it in two equal parts. This will be used for orange and green rice. The white rice needs to be cooked separately.

Orange Rice

Puree the boiled carrots and tomatoes together in a food processor and keep aside. Heat a pan with 1 ½ - 2 tsp oil and add turmeric and sambhar powder (you can also use garam masala powder). Next, add the pureed carrots and tomatoes. Cook for 2-3 minutes, till it’s sufficiently cooked. Now add in 1 part of the total rice and mix it gently together. Add salt as per taste.

White Rice

Lightly roast the cumin seeds and keep aside. Then take the container you will cook rice in and add the required quantity of rice, cumin seeds, coconut milk, salt (as per taste) and 1 cup of water. Cook the rice as usual in a pressure cooker. That’s it! Your white rice is done.

Green Rice

Blend the coriander leaves, cashews (use grated coconut if cashews are not available) and green chillies in a mixer grinder. You can a little water to make a smooth paste. Now heat a pan with oil and add in mustard seeds. After the mustard seeds pop, add in the split black lentils and stir fry. Next, add the blended paste and cook it for a 3-4 minutes, till the raw smell goes off. Now, add the rice and mix well with the paste. Finally, add salt as per taste.

This dish will be perfect for serving on the republic day for lunch or dinner. Just team it with a curry and you are good to go.

The Tricolour Salad:

Not so big on carbs? Well, this tricolour salad will fit right in with your healthy diet.

Ingredients:

1 Small Broccoli (cut into florets)
1 Small Lettuce
1-2 Big Carrots (slice diagonally, then cut into pieces)
8-9 Baby corns (diagonally chopped)
1 Big Radish (julienned)
3-4 Tbsp. Butter
As per taste Salt
As per taste Pepper


Wash all the veggies thoroughly and keep aside. Boil the baby corn in water. Add in a pinch of salt. Once the baby corn is boiled, switch off the flame and take it out. Then add in the broccoli florets and blanch for a few seconds in the same water.

Heat 1 tbsp. butter in a pan, add the carrots and sauté for couple of minutes. Add in the desired quantity of salt and pepper, mix well together. Cook for another minute and keep aside. Repeat the same process for the baby corn, radish and the broccoli. You can even serve the radish raw.

Now start arranging the vegetables as per the tricolour on a plate. The lettuce is eaten raw so simple arrange it with the green section. Voila! Your salad platter is ready. Serve it with some mayo or a cheese dip on the side.
