3 healthy tricolour recipes to make this Independence Day

Come August 15, the air will be filled with patriotism. Be it celebrating with friends and family by hoisting our flag in the morning or participating in musical or sports programs, our Independence Day means a lot to us.

Since it is always a holiday, it becomes a wonderful reason to call your friends and family over and have a little face time in this digital age.

This year, why not celebrate Independence day with scrumptious, fun, healthy, and easy recipes that are naturally tri-coloured. That's right, not a single drop of food colouring!

Let’s take a look:

Assorted Vegetable Tricolour Dumplings:

Dipped in patriotism, this yumilicious appetizer is perfect for an Independence Day menu. Easy as well as healthy, these vegetarian dumplings are quick to cook at home and relish with your friends and family on a holiday!

Ingredients:

For Filling For Dough
  Cabbage (Chopped) – 250gms   Refined flour – 200gms
Carrot (Chopped) – 50gms Carrot paste – 1
Bok Choi (Chopped) – 50gms Spinach paste – 1
 Veg Seasoning – As per taste   Water – As per requirement  
Salt – As per taste
Sesame oil – 1-2 tbsp
Salad oil – 1tbsp


Procedure:

Step 1: Take a bowl and add all the chopped vegetables. Add veg seasoning, sesame and salad oil and mix properly. Once done, keep aside for few mins.

Step 2: Take a bowl and knead the refined flour. Add water as required to maintain the consistency. Cover the dough with a muslin cloth and let it rest for 20 mins.

Step 3: Separate the dough into three equal parts. Now, add carrot paste to one portion and knead it for 1-2 mins. Repeat the same process with another portion and add spinach paste to get the green colour.

Step 4: Divide the dough into equal portions and shape into balls. Roll the dough into thin 5-inch rounds.

Step 5: Place some of the veg filling in the centre and ensure that the filling is evenly spread. Bring the edges together and twist to seal it in various ways.

Step 6: Steam for almost 15 to 20 minutes. You can also use Bajaj Majesty RCX28 Deluxe Multifunction Cooker for steaming. If you are using rice cookers, the trick is to know the right time to cook the dumplings.

Step 7: Remove the dumplings from the cooker and serve hot with different types of sauce. Arrange the dumplings in the tri-colour to get the Independence Day look!

Tricolour Salad:

From side dish to star attraction, no menu is complete without a salad. From modern ingredients to diverse cuisines, this healthy twist has almost forayed into the plates of every genre of people.

Ingredients:

Broccoli – 1 small
  Baby corns (Chopped diagonally) – 8-9  
Carrot – 1
Butter – 3 tbsp
Salt and pepper – As per taste

Procedure:

Step 1: Wash the baby corn and boil it in water with a little salt for 5 minutes. Drain the excess water and keep the baby corn aside. Keep the boiling water for further use.

Step 2: Blanch the broccoli florets in the same water for a second. Remove the broccoli and keep aside.

Step 3: Wash and peel the carrot and slice it diagonally.

Step 4: Heat 1 tbsp of butter in a pan. Now, add the broccoli florets and cook them for a minute. Add salt and pepper, and cook for another minute. Remove the broccoli from the pan and keep it aside.

Step 5: Repeat the same above-mentioned process for carrot and baby corns.

Step 6: Finally, arrange the vegetables in a plate to represent the tricolour. Season it with salad oil and sesame oil. Voila! Serve it with some mayo or a cheese dip on the side.

Tip: For the white layer, you can also opt for radish.

Tricolour Dhokla:

Termed as one of the most famous and healthy dish, popular Gujrati snack - dhokla will make your taste buds wanting more. This Independence Day, try this steamed and spongy snack that is not only tasty but healthy too.

Ingredients:

For Dhoklas For Garnishing For Seasoning
Idli batter – 3 cups Grated coconut – 3 tbsp Oil – 1tbsp
Spinach puree – ¼ cup Chopped coriander – 1 tbsp Mustard seeds – 1 tbsp
Green chilli (paste) - 1   White sesame seeds – 1 tbsp  
  Ginger (paste) – 1 small piece       
Gun powder – 1tbsp
    Kashmiri red chilli powder – ¼ tbsp    
Oil/butter (greasing) – 1tbsp

Procedure:

Step 1: Divide the idli batter into three parts.

Step 2: For green colour, mix 1 cup batter with the spinach puree and ginger-green chilli paste.

Step 3: For white colour, keep 1 cup batter aside

Step 4: For orange colour, mix 1 cup batter with gun powder and chilli powder.

Step 5: Transfer the green batter to a greased plate and steam it. For steaming purposes, you can either use rice cookers or you may try Bajaj 1701 MT DLX Microwave Oven. Alternatively, you can also steam Dhoklas in Bajaj latest range of pressure cookers.

Step 6: Once done, pour one cup of plain batter for the white layer on it and again steam it.

Step 7: Once done, add the orange batter on top of it and steam it.

Step 9: Cut the dhokla into shapes of your choice and arrange the pieces on a plate.

Step 10: Season it with the mentioned ingredients and garnish it with grated coconut and coriander leaves.
