A Tasty Mixed Veg Paratha Recipe for a Delightful Gudi Padwa

Gudi Padwa or the Hindu New year is a significant festival celebrated in many parts of India. Apart from rituals, Gudi Padwa is also known for its lip smacking delicacies prepared to mark this special day. Starting this day with a scrumptious breakfast would surely be sublime - so here is our Mixed Veg Paratha recipe for you!

Ingredients required:

For the dough:
  • 2 cup wheat flour/atta
  • ½ tsp salt
  • 4 tsp oil
  • water to knead the dough
  • wheat flour (for dusting)
  • oil (for roasting)

For the stuffing:
  • 2 potatoes
  • 1 chopped carrot 
  • 1cauliflower
  • ½ cup of chopped beans
  • 1 cup of peas 
  • Salt
  • 2 tsp oil
  • Ginger paste
  • Finely chopped chili 
  • ½ tsp garam masala
  • 1 tsp cumin powder / jeera powder
  • ½ tsp amchur / dry mango powder
  • 1 tsp coriander seeds (crushed)
  • ¼ tsp ajwain /carom seeds
  • A pinch of Hing / asafoetida
  • 1 cup of grated paneer / cottage cheese 
  • 2 tbsp coriander (finely chopped)

Recipe:

The dough:
  • Start by kneading the dough so that it can be left to rest while the stuffing is prepared.
  • Take the flour and pour it into a bowl, add some salt, some oil, and use water to knead the dough.
  • The dough should be soft enough when kneaded.
  • Grease the dough with some oil and then let it rest for some time.

The stuffing:
  • Take a pressure cooker, add 1 or 2 peeled potatoes to it, 1 chopped carrot, 1 cauliflower, ½ cup of chopped beans, a cup of peas, and some salt.
  • Cook these vegetables for two whistles and then let them cool.
  • Now start mashing the vegetables well until they turn into a soft paste-like consistency.
  • Now, take a pan and heat some oil in it. Add some ginger and chili paste and let it cook for a minute or two.
  • You can also use the Nirlep Happiness set for a non-stick experience. 
  • Add all the spices like red chili powder, garam masala, cumin powder, coriander powder, turmeric powder, and amchur powder, and cook for another minute.
  • Now, add the paste of vegetables to the mixture and cook well while mashing the mixture well.
  • Add the grated paneer to the mixture and mash well.

And Finally, The Paratha!
  • Pinch out a ball of dough and roll it flat. 
  • Take some stuffing and place it on the dough. 
  • Seal it like a pocket and start rolling it flat.
  • Keep using some dusting dough to roll the Paratha evenly.
  • Now take a pan and heat it.
  • Add some oil to it and place the rolled Paratha on it.
  • Cook it well from both sides using sufficient oil.

Pro Cooking Tips
Make sure you add salt to the vegetables when you're cooking them inside the pressure cooker. This will help them to cook faster and also retain some salt for taste. Also, use enough dough to dust it over the rolling board so that the Paratha does not stick to it.
