Bristling with soft and juicy chicken pieces, rich eggs and delightful English muffins and ending with a creamy and appetizing hollandaise sauce, this recipe will surely be going to make you want more. 

If you haven’t had Eggs Benedict Casserole before, then this is the perfect place to start – because it’s perfectly delicious! There aren’t many casserole recipes that we love and want to make again and again but this one makes the cut.

  • Large eggs – 8
  • Milk – 2 + 1 cups
  • Green onions, chopped – 3
  • Onion powder – 1 tsp
  • Salt – 1 tsp
  • Chicken, diced – 250 gms
  • English muffins, diced—6
  • Paprika – ½ tsp
  • Hollandaise sauce mix – 1 cup
  • Milk – 1 cup
  • Margarine – ¼ cup 

Step 1:
 Spray the baking tray with cooking spray/oil and keep it aside.

Step 2: Take a large bowl and whisk eggs, then add 2 cups milk, green onions, onion powder, and salt and mix it all together. Step 3: Layer half the chicken pieces in the prepared baking dish. Spread English muffins over the chicken and top with remaining pieces.

Step 4: Pour egg mixture over the casserole. Cover the baking tray with foil wrap and refrigerate overnight.

Step 7: Bake in the preheated oven for about 30 minutes or until the eggs are properly set.

Step 8: Remove the foil and continue baking for 15 more minutes or until the eggs are completely set.

Step 9: Whisk hollandaise sauce mix with the remaining milk in a saucepan. Add margarine and bring to a boil, stirring continuously over medium heat. Keep stirring for a minute or until the mixture gets thickened. Drizzle the sauce over the casserole and serve hot!

We have used readymade Hollandaise sauce to pour over the casserole, but if you want to go to the hassle of making it homemade, it will taste even better.

Tip: To make hollandaise sauce from scratch, melt the butter in a microwave for a minute. Combine the egg yolks, lemon juice, dijon mustard, salt and pepper and blend for 5 seconds. Slowly pour the hot melted butter into the mixture as the blender is running. Pour the sauce into a bowl and keep aside.
