A traditional Gujarati savoury cake made with rice, lentils and myriad of vegetables, Handvo is a tasty and wholesome dish that can be enjoyed as a meal by itself or with a side of chutney. Spiced with fresh ginger and green chilies, this healthy flavoursome cake can be relished for breakfast or dinner.

Ingredients:

  • Rice – 2 cups
  • Green gram – ½ cup
  • Bengal gram (Chana) – ½ cup
  • Black urad dal – ½ cup
  • Yogurt – 1 cup
  • Oil -- 4 tbsp
  • Ginger-green chilli paste – 1 tbsp
  • Salt – As per taste
  • Red chilli powder – 1 tsp
  • Turmeric powder – ¼ tsp
  • Cabbage, shredded – 2 tbsp
  • Onion, thinly sliced – 1
  • Bottle gourd (Lauki), grated -- 2 tbsp
  • Mustard seeds – 1 tsp
  • Asafoetida (Hing) – A pinch
  • Curry leaves, chopped – 5-6
  • Black sesame seeds – 1 tsp
  • Red chilles – 2 

Step 1:
 Coarsely grind the rice, black urad dal, green gram and Bengal gram in a Bajaj Mixer Grinder. 

Step 2: Once done, take 2 cups of this powdered mixture in a bowl. In the same bowl, add yogurt, 2 tablespoons of oil and lukewarm water to make a thick batter. Cover and let it ferment overnight.

Step 4: Add ginger-green chilli paste, red chilli powder, turmeric powder and salt to the mixture.

Step 5: Now add the sliced onion, grated bottle gourd and shredded cabbage to the mixture and mix properly.

Step 6: eat HhHeat the remaining oil in a pan and add asafoetida and mustard seeds. When the seeds splutter, add curry leaves, dried red chillies, and sesame seeds. Add the tempering to the batter and mix well.

Step 7: Pour the batter into a mould. Put some water in a baking tray and place the mould on it.

Step 8: Cook in the preheated oven at 200o C for 20-25 minutes. Let it cool and then demould the Handvo carefully.

Step 9: Serve with chutney of your choice.
