Microwave Coconut Fudge

Most people associate this light version sweet recipe with winter holidays. Ingredients:
- Sweetened condensed coconut milk – 500 gm
- Butter, chopped – 150 gm
- Caster sugar—100 gm
- Glucose syrup – 2 tbsp
- Vanilla extract – 1 tsp
- 1/4 teaspoon salt
- White chocolate, finely chopped – 180 gm
- Flaked coconut, toasted – 1/3 cup
- Vanilla ice-cream (optional) – 3-4 scoops
Method:
Step 1: Grease a flat pan and line the base and sides with baking paper/parchment paper, allowing the edges to overhang. Keep it aside.
Step 2: Take a large microwave-safe bowl and pour the condensed milk, butter, sugar, glucose syrup, and vanilla essence. Microwave on high, stirring every 3 minutes, for 15 minutes or until the mixture thickens slightly.

Step 3: Add the chopped chocolate to the fudge mixture and stir until smooth.
Step 4: Pour the mixture into the greased tray and spread it evenly with the help of a spoon. Sprinkle flaked coconut and set it aside at room temperature for 30 minutes. Place the fudge mixture in the refrigerator for 5 hours or until set.
Cut it into squares and serve with a scoop of vanilla ice-cream (optional).
You can also wrap your fudge bar with a cellophane paper and tie a ribbon on it to give as a gift during Christmas or New Year.
